I've been doing it this way for years and I add into the rice some minced red onion, 1 whole chopped tomato dinced up fine and a drizzle of olive oil (very heart healthy!) It sure is a good way to enjoy rice! Tom do you know a secret when you cool rice is to first rinse the rice really well about 5 or 6 times with cool water dumping out the murky cloudy water in a dish or bowl before adding it to the pot??
